After selecting only the best beef brisket for our gourmet jerky. We trim off all of the fat and hand slice each piece. By doing this we can inspect each piece and insure the highest quality. No two pieces are the same size or shape, unlike the mass produced variety that are pressed or cut by machine.

The meat is then marinated for 24 hours in our 22-year-old family recipes. No MSG or nitrates are added and we don’t use fillers like corn syrups or solids. The jerky is then dehydrated for 2 to 4 hours depending on the cut. Many companies use compounds to make this process easier. We don’t cut corners, when you eat our gourmet jerky you’ll taste the difference.
